This family favourite is a fresh, healthy meal that even the kids love! Ridiculously tasty and simple to whip up, it is an essential for nights when youโ€™re on the go and pressed for time.

WHAT YOU’LL NEED

  • 400g Barbetta egg fettucine
  • 400g Barbetta mushroom ragu
  • 300g fresh ricotta
  • 100g rocket
  • 50g shaved parmesan
  • 50mL extra virgin olive oil

THROW IT TOGETHER

step 1Boil your Barbetta fettucine in salted boiling water for 3 minutes and then strain in a colander.

step 2Warm the mushroom ragu in a saucepan. Add strained pasta to pan and mix well for 1-2 minutes.

step 3 Remove the saucepan from heat, then toss through the ricotta, rocket and shaved parmesan.

step 4 Portion pasta onto plates and drizzle with olive oil.
